Citrus, ginger spice, nougat, praline, lemon, buttery toast, stone fruits.... Sinapius new release 2010 Chardonnay
runs the full gamut of all possible chardonnay flavours from first pour
to last sniff and sip. This is definitely a white wine that benefits
from breathing and is one of the most exciting and interesting Tasmanian
chardonnays produced to date.
Sinapius is a very small vineyard owned by Vaughn Dell and Linda Morice, situated in the Pipers River sub region, not far from Delamere, Dalrymple and Jansz.
Winemaker Vaughn Dell's notes: "100% estate fruit from 16yr old vines, dry grown. Yield - 2 tonne from 0.4ha (5 tonne/ha equivalent). Harvested @ 12.8 baume. Whole bunch basket pressed straight to barrel (35% new). Full solids ferment using wild yeasts. Weekly battonage till natural malo in spring. 12 months ageing on lees before racking to tank. Bottled 4 weeks ago without fining, and only light filtration. 150 cases produced.
To date this wine is the best we’ve made, and heading down the right path as far as natural winemaking without any major intervention."
Vintage 2007 won a Top Gold in its class at the 2009 Tas Wine Show.
