In 2025 the Loire grapes for this wine were harvested on 21 August and the wine was bottled on 25 October so everything happened very fast (all in stainless steel tank). The vines are between 10 and 35 years old and grow on clay and schist. It is mainly Grolleau Gris, with a tiny amount of Muscat à Petits Grains from Domaine Caterole in Roussillon, both of which were macerated for a few days (separately) to help create its pink hue, and 10% Merlot, a grape the Mosses don't usually use, which was directly pressed. It is from the same grower they source their other Loire négoce grapes from and according to Joseph Mosse was too good not to take! This is not meant to be a serious wine but is utterly delicious. It is the sort of wine which does not need food and is unlikely to last long once opened. The Chardonnay and Sauvignon Blanc both were aged for approximately 7 months in old 228 litre barrels and the Chenin Blanc in stainless steel, also for avout 7 months. After blending for several weeks it was bottled in March 2026. It is very fresh with a quite mineral, salty finish with notes of herbs. It is a blend of 40% Pineau d'Aunis, 40% Merlot and 20% Grolleau Noir. The Pineau d'Aunis and Grolleau Noir were directly pressed. The destemmed Merlot was macerated for 6 days prior to pressing and provides most of the colour. Each variety was aged separately in stainless steel tanks then blended a month before bottling in January 2026.
