Two serious sites come together to make something fun and seriously drinkable. Frankland River Riesling (90%) and Mount Barker Shiraz (10%) were given a couple of days on skins to build colour, aromatics and gentle texture before being pressed off and co-fermented wild. Timing is everything with pet nat: we bottled at just the right moment to catch the last breath of fermentation, creating a gentle, natural fizz.\u003c\/p\u003e\n\u003cp\u003eThe wine was carefully racked to keep sediment low, but as always with undisgorged pét nat, you’ll find a bit of fine sediment and natural tartrate crystals in the bottle. No fining, no filtration, just honest, playful sparkling wine.
