There is a steely ferric compound,blood sausage/black cardamom also hints of charred roast beef lardons, wild roadside black berries (complete with dust!) also some star anise. tamarillo (tree tomato) so sour but juicy sweetness
What a great texture. some cayenne pepper flakes, a lot of mouth puckering goodness. Tannins are playful and restrained in this brief mouth journey, the glycerol glide is compelling.
