2025 ANIM Cornwall Pinot Noir (limited)
Tasting all of these wines together, and now arriving at the Cornwall, it is fiercely different. There is more of an open-knit quality to this wine - the cardigan of the line-up. Beautiful, composed fruit, of different types and shapes, with a cavalcade of herbs and spices.
As an inaugural wine for us, we separated the fruit into two ferments - one completely de-stemmed whole berry, the other with 30% whole clusters. The final wine ends up a blend of both components, closer in the end to 20% whole bunch. Each brings its own merits and influence on the wine.
2025 ANIM Clarence Pinot Noir
I distinctly remember this wine’s trajectory through fermentation and then during its time in barrel. By far the prettiest of our 2025 Pinot Noirs, it is also the lightest and most elegant, characters it has possessed since day one.
The floral, crunchy red fruit and alpine herb elements are a sheer joy to smell. The bunch component (50% whole cluster in 2025) no doubt contributes to this, as it does the fine and quite silky tannins on the palate, fortified by 20% new French oak. This is beguiling Pinot.
2025 ANIM Tinderbox Pinot Noir (limited)
Immediately more hedonistic, this latest iteration of Tinderbox I think is our best yet. Savoury and sweet, spice and sauvage, dark and mysterious. Fruit picked on our terms (no PTSD this vintage!), the inclusion of 35% whole clusters, with newer French oak (1-2yr old) rather than brand new oak. It makes for a very complete Pinot, slightly fuller bodied than previous examples, with trademark intensity, length and flavour.
2025 ANIM Windrush Pinot Noir
A dry farmed (unirrigated) cold site, always with small berries, always with a big personality. This vintage is no different. A dark floral/fruit profile (violets, roses, cherry/berry) with hints of middle eastern spices and black tea. Rich, mellifluous and harmonic on the palate - everything where it needs to be, at just the right volume. There is a latent beat to this wine that catches you on the finish. Compelling and delicious.
