Principia Pinot Noirs

Principia was estalished by winemaker Darrin Gaffy in 1995 at Red Hill in Victoria's Mornington region. The wine is grown, made and bottled on site. No irrigation is used, no pesticides are used, juice is extracted by a basket press, gravity controls all juice, must and wine transfers and indigenous yeasts are used for both primary and secondary ferments.

2016 Principia Pinot Noir: Fragrant with violets, strawberry and fresh herbs. Soft red fruits and a silky flow across the palate. Very persistent and exceptionally fine tannins.

2019 Principia Altior Pinot Noir: Juicy and energetic in the mouth. Savoury char from the oak. Cleansing tannins, almost slightly chewy, which is terrific.
