La Prova Fiano is a brilliant example of how well some Italian varietals do in the Adelaide Hills. Sam Scott's La Prova Fiano is dry but aromatic, clean but soft and is ultra-refreshing well-chilled. It veers between the texture of pinot gris with the liveliness of riesling but in a slightly drier package.
And here's Jancis on the variety fiano from The Tome (aka 'Wine Grapes, A Complete Guide) 'Rich, waxy, strongly flavoured, fashionable southern Italian.' And paraphrasing: 'Old variety from Campania...mentioned as early as 1240... wines are strongly flavoured...attractively waxy texture, subtle aromas and best have capacity to age...recently found favour in Australia.'
