Lark Distillery, Hellyers Road and Sullivans Cove were the first producers of premium single malt whisky in Tasmania. Their expertise shows, with all producers winning national and international awards over the last couple of years, culminating in the Best Whisky in the World for Sullivans Cove 'limited release' Blue Label French Oak Cask at the World Whiskies Awards in London.
Old Hobart Distillery began in 2005 when Casey Overeem secured a distiller's licence. With his daughter Jane, Casey has created a range of extremely highly-regarded whiskey.
Hellyers Road is based, as the name suggests, in the state's north-west at Burnie.
Belgrove Distillery, Australia’s first rye distillery, is located at Kempton in Southern Tasmania where the rye is grown, malted. fermented, distilled, barrelled and bottled. In the words of Peter Bignell, "I grow my own ryecorn to produce a 100% rye whisky. I built my copper pot still from scratch. It is direct fired with biofuel which is used cooking oil, from a roadhouse next to my farm. Hot water is also biofuel heated. My tractors, forklift and truck also run on Biodiesel made from the used cooking oil. The only significant material I bring to the farm is waste cooking oil and the main product to leave is whisky"
