Dr Edge is former Bay of Fires winemaker Peter Dredge's new venture. This is his second vintage of Dr Edge Pinot Noir - a blend of East Coast, Tamar Valley and Derwent Valley fruit.

Gleaming and bright cherry colour; fragrant with enhanced aromatics from whole bunches in the ferment - smoky szechuan pepper and clove-scented carnations, which is most attractive. Terrific nervy tension and pinosity in the mouth, with a foil of chalky tannins. It is one of those alluring pinots that become more and more interesting with each sip. Dr Edge is not a heavy wine but there's depth to the flavours. The clean finish makes it a super match for 'meaty' seafood like stewed or grilled octopus, or the unctuous flesh of slow-cooked pork belly.

A few years in the cellar will amplify the sweet fruit characters.
